My Inspiration Behind This:
I tired my first K-toast from Oh-K dog this year... 2024, can you believe that. I don't know what took me so long, maybe it's because I couldn't stand the thought of paying $10 for eggs between 2 pieces of toast. Don't get me wrong, the presentation is beautiful and I love everything about it, but like I said it's 2024 and inflation is rough. One day after an exam, I was tired and hungry, and it so happened to be lunch time. I wanted something filling but also comforting and decided to grab the k-toast. To my surprise it was like no other breakfast sandwich! The flavors were a punch to my palate but in the best way ever. It was salty, sweet, and the eggs were perfectly silky.
As much as I loved it, I already knew I wouldn't be paying $10 on a daily for this toast, nor would I be paying an extra $2 to make my bread garlic bread. So here you are my friends, a Korean egg drop sandwich that is totally makable at home and totally delicious and totally won't cost you $12.
Ingredients We're Working With:
Garlic Toast:
Brioche bread - fluffy and thick is what we want for this sandwich
Garlic - adds flavor and fragrance to out toast
Parsley - for a slight taste but mostly for color
Unsalted butter - adds not only a beautiful color and taste but helps the salt bind to the toast
Olive oil - balances out the butter
Filling:
Eggs - eggs!
Bacon - cook it however you like, but trust me when I say crispy bacon works wonders with this recipe
Cheese - I recommend a mozzarella, a cheese typically fused into Korean-American fusion dishes
Heavy cream - a splash of this will take the silkiness of your eggs to the next level
Butter - adds flavor
Sea salt
Sauce:
Japanese mayo - we want sweet mayo for this sauce, because this toast is built difference from other breakfast sandwiches through the sweetness of this sauce alone
Sweetened condensed milk
Commonly Asked Questions:
I don't eat pork, can I use other meats?
Of course! There are endless substitutions for pork. Ones that come to mind are: turkey bacon, turkey patties and chicken sausage. For non meat eaters you can omit the meat as a whole, eat as is or sub with avocado.
I don't like garlic, how can I omit that?
NO WORRIES! Omit the whole garlic butter as a whole. You can either spread some butter or olive oil on your bread and toast it the same way as instructed.

Equipment:
DIY sandwich holders: I used Party goodie bags and cut off 3/4th of the bag. Not as sturdy, but I had them on hand. It did the trick, once the bread and all the items were placed, it was heavy enough to keep the remaining plastic part of the bag from concaving. Just make sure to place your bread at a diagonal (refer to video for reference).
Ingredients:
Garlic Toast:
2 slices thick brioche bread
1 tbsp garlic, minced
1 tbsp dried parsley
2 tbsp unsalted butter, melted
1 tbsp olive oil
Filling:
3 eggs
3 slices bacon, can substitute ham or omit
2 slices cheese of choice, I omitted
1 tbsp heavy cream
1 ½ tbsp butter
½ tsp sea salt
Sauce:
2 tbsp Japanese mayo
2 tbsp sweetened condensed milk
** Optional - Drizzle of Sriracha
Directions:
To make the sauce, mix together the the Japanese mayo and condensed milk. Set aside.
To make the garlic toast, combine the olive oil, garlic, salt, butter, and parsley in a bowl. Using a pastry brush, brush the mixture onto your bread on both sides. Heat a pan over medium heat and add the garlic toast. Toast both sides of the bread until golden brown. Remove from pan and set aside.
On medium high heat, fry the bacon until crisp and cooked threw, set aside.
For the eggs, in a bowl mix your eggs, heavy cream and salt to taste, until well combined.
Heat butter or oil in a clean pan over medium low heat. Once heated add your egg mixture. Let the eggs partly cook and then gently move the eggs back and forth using a spatula or chopsticks until it fully sets. Turn off the heat and set aside.
To assemble, place your bread in the holder, add the cheese, bacon, then the scrambled eggs.Drizzle the sauce on top and sprinkle with parsley or chives. You can also add sriracha at this point, or other toppings like avocado. Eat right away and enjoy!
