Vegan Strawberry Shortcake Parfait

A vegan strawberry shortcake parfait is a delicious and healthy dessert that is perfect for any occasion. It consist of layers of vegan vanilla cake, tart strawberry jam, and vegan whipped cream. This vegan version might be even better than the original. Strawberry shortcake in a wine glass, who wouldn't love that!

What is Strawberry Shortcake?:

Strawberry shortcake is a classic dessert made with a light and fluffy biscuit-like cake, topped with sweetened strawberries and whipped cream. It is often served with a dollop of ice cream or a scoop of vanilla custard. The cake is usually made with a combination of flour, sugar, baking powder, butter, and milk, and is often flavored with vanilla extract. The strawberries are usually macerated in sugar and sometimes a splash of lemon juice to bring out their flavor. The whipped cream is usually made with heavy cream, sugar, and vanilla extract.


Here we're turning this popular dessert vegan! Moist vanilla cake is a classic cake that is light, fluffy, and deliciously moist. It is made with a combination of oil, sugar, flour, vinegar, baking soda, and vanilla extract. This strawberry filling is made with: strawberries, jam, and carbonated water, making this perfectly sweet and tart. Both the cake and the strawberry filling is balanced out with a rich yet light vegan whipped cream.


History of Strawberry Shortcake:

The concept of shortcake dates back to medieval Europe times. Back then a "short" pastry was made using fat, flour, and sugar. Why were they called "short", well because the fat prevented gluten formation, resulting in a crumbly and tender texture.


The shortcake recipe was brought to America by European settlers. It grew in popularity by the 19th century.Early American shortcake recipes often featured a simple sweetened biscuit or sponge cake base topped with fresh fruit and whipped cream.


My Inspiration Behind This:

I love baking. I maybe love it even more than getting to eat the stuff I bake! It just sucks because my sister has a dairy intolerance, and when I make food I want my family to be able to enjoy it as well. Ngl, I do not like baking without dairy. There's a certain richness dairy brings that no substitute can really replace.

For Christmas this year it was only my siblings and I. I wanted to make a vegan dessert, so that we could all enjoy it. My sister is also a huge strawberry ice cream fan, I remember her eating strawberry ice cream in place of meals before she gave up dairy. So I knew strawberry shortcake it had to be! I turned it into a cute parfait and placed them in a wine glass to make it fun with a dash of classy!

Can I use strawberry jam instead of of raspberry jam?

Yes! You can use whatever jam you like. I went with raspberry because I like the slight bit of tartness it has over strawberry jam. Raspberry jam also has a darker red hue that compliments this parfait. I think strawberry jam would taste just as good in this recipe! In fact, use whatever jam you love, it's for you at the end of the day.


I don't have a wine glass, what are other ways I can turn this into a parfait?

No worries! You can use 8 oz glass jars instead, or plain glass cups. I suggest any mug or glass that is transparent, so that you can see the beautiful layers of this parfait.

Directions:

Vanilla Cake (1 layer):

  1. Preheat your oven to 320°F (160°C). Line 10 inch round baking pan with parchment paper or grease with oil.

  2. Add all the dry ingredients to a large mixing bowl and mix until combined. Add all the wet ingredients and mix just until there are no lumps no lumps.

  3. Pour the batter into your round baking pan and bake for 20-25 minutes or until you can insert a toothpick or skewer in the middle and it comes out clean. Allow the cake to cool in the pan before cutting in to 1 inch squares.

Macerated strawberries:

  1. Dice your strawberries into tiny cubes and add into a medium bowl.

  2. Add the jam carbonated water, mix until combined.


Vegan Whipped Cream:
  1. Combine the heavy whipping cream, powdered sugar, and vanilla in


Assemble the Vegan Parfaits:

  1. Place your 1-inch cake cubes in the bottom of your favorite wine glass.

  2. Top with a layer of strawberries and then whipped cream. Repeat the layers once more.

  3. Top the vegan parfait with a strawberry and some thyme. Chill the parfaits for 1-2 hours before serving.
